Citrus Pork Kabobs Printer Friendly version
 
1 1/2 pounds pork tenderloin, cubed
1 cup barbecue sauce, smoky
3/4 cup orange marmalade
1 teaspoon horseradish, prepared
1/2 pound mushrooms
1 1/2 cups zucchini, sliced 1/3" thick
1 red pepper, cut in wedges
 
Combine barbecue sauce, marmalade and horseradish. Cube pork into 3/4 inch cubes and let marinate in refrigerator for 30 minutes. Thread pork and alternate vegetables on skewers. Place kabobs on baking sheet and broil for 6 to 8 minutes, turning frequently, or grill for same amount of time.
