Easy Microwave Tofu Lasagna Printer Friendly version
 
32 ounces spaghetti sauce
10 ounces tofu, soft
1 large egg
30 ounces spinach, frozen, chopped and drained
10 ounces lasagna noodles, cooked
3 cups part skim milk mozzarella cheese, shredded
1/2 cup water
1 pound mushrooms, sauteed
1 small onion, chopped
 
Sauté mushrooms and onion in 1 t oil and mix with the spinach. In a small bowl, combine tofu, egg and water; beat well. In bottom of a 9"X13" microwave safe dish, spread a small amount of the spaghetti sauce mixture to keep the noodles from sticking. Pour half of the tofu mixture over the noodles and top with half the spaghetti sauce mixture. Sprinkle half of the cheese and half the thawed, drained spinach over this and repeat the layers. Cover the dish tightly with plastic (wrapping both directions if necessary). Cook on high power for 8 minutes. Continue to cook an additional 32 minutes on medium high. Let stand 15 minutes and serve.
