4 10" or 8 6" tortillas 19 ounces kidney beans, canned, rinsed and drained 1 cup salsa 4 green onions, chopped 1/4 cup green olives, chopped 2 tablespoons cilantro, chopped 1 1/3 cups low fat cheddar cheese, shredded |

Soften tortillas on grill or in microwave. Arrange tortillas on work surface. In a bowl, using a potato masher, mash kidney beans with 1/2 cup salsa. Divide bean mixture among tortillas, spreading evenly over each and leaving 1/2 inch border. Sprinkle bean mixture with onions, olives, cilantro, then cheese (in this order). Fold tortillas over and press gently. Barbecue or grill on greased grill over medium high heat for 8-10 minutes or until browned and crisp. Garnish with remaining salsa. | ||
