Split Pea Soup Printer Friendly version
 
3 cups split peas, soaked overnight
1 medium onion, chopped
1 cup celery, chopped
2 carrots, chopped
2 cloves garlic, minced
1 tablespoon light margarine
1 cup ham, chopped
2 bay leaves
1 teaspoon thyme, fresh/dried
1 1/2 teaspoons salt
2 teaspoons hot sauce
1 1/2 teaspoons pepper
1 1/2 quarts water
 
Wash and sort dried peas to remove any foreign matter. Soak the peas overnight in water to cover, drain. Melt margarine in soup pot; add onion, garlic, celery and carrots. Saute until soft, about 5 minutes. Add split peas, ham, seasonings and water; simmer approximately one to two hours until split peas are soft. You may want to put mixture through a food mill, or food processor and blend until creamy and smooth. Heat to serve.
