Chunky Potato and Swiss Chowder Printer Friendly version
 
1 cups leeks, thinly sliced
2 cloves garlic, minced
4 cups potatoes, Yukon Gold, peeled and cubed
1 cup carrots, cubed
1 cup yellow squash, cubed
32 ounces fat-free chicken broth
¾ cup half and half
2 ounces Swiss cheese, shreded
1/2 teaspoon salt
1/4 teaspoon black pepper
fresh parsley, chopped
 
Heat a large Dutch oven coated with cooking spray over medium high heat. Add leek and garlic, saute 3 minutes or until tender. Stir in Potato and next 3 ingredients (potato through Chicken broth), bring to a boil. Cover, reduce heat, and simmer 20 minutes or until tender. Place half of the potato mixture in a blender, and process until smooth. Return pureed potato mixture to pan, stir in the remaining ingredients except parsley. Cook over medium heat until cheese melts. Sprinkle with parsley, if desired.
