1 tablespoon extra virgin olive oil 2 1/2 cups mushrooms, finely diced 4 cloves garlic, minced 1 1/2 cups onion, finely diced 3/4 cup skim milk 5 cups broccoli florets, chopped 4 1/2 cups fat-free chicken broth 3 small potatoes, cubed 2 teaspoons lemon pepper 3 tablespoons basil, or 1T dry 1 Tablespoon flour salt and white pepper, to taste 1 teaspoon Italian seasoning |

In a large pot, heat oil over medium heat; when hot add onions and garlic and cook for 5 minutes or until onion is soft and translucent. Add the mushrooms, celery and potatoes and continue cooking for another 2 to 3 minutes, then add the flour. Stir and cook the flour with the vegetables for 1 minute. Add the milk and chicken broth, stirring well to separate the flour granules, bringing the soup to the simmering point. Add the basil and broccoli and continue simmering for 15 minutes. For creamier texture, place 1/2 of mixture in food processor and blend until smooth. Taste for seasoning. Garnish with fresh basil. | ||
