Asian Chicken Noodle Soup Printer Friendly version
 
44 ounces fat-free chicken broth
1 cup water
1 medium sweet red pepper, sliced bite size
1/3 cup green onions, sliced
1 teaspoon fresh ginger root, grated.or 1/4 tsp dried
1/2 teaspoon crushed red pepper
1 1/2 cups cooked chicken, or turkey
3 ounces soba noodles, or Asian noodles
10 ounces tofu
1 cup fresh snow peas, halved crosswise
11/2 teaspoons sesame oil, optional
parsley, for garnish
 
In a large saucepan, combine broth and water. Bring to boiling. Stir in sweet red pepper, onions, gingerroot and the crushed red pepper. Add chicken or turkey and return to gentle boiling. Add soba noodles, tofu, crushed red pepper and sesame oil. Reduce heat, simmer covered for 3 minutes. Stir in pea pods. Simmer uncovered for 1 minute or more or until pea pods are crisp- sesame tender. Add oil if desired. Ladle soup into bowls.
