Roasted Garlic and Orzo Pilaf Printer Friendly version
 
12 cloves garlic, quartered
1/2 tablespoon olive oil
1/2 cup orzo (riso pasta)
1/2 cup instant rice
14 1/2 ounces low sodium chicken broth, defatted
1/4 cup green onions, sliced
1 tablespoon parsley, dried
1/4 cup slivered almonds, toasted
Salt and pepper, to taste
 
Peel and quarter garlic. In a medium sauceoan cook garlic in hot olive oil over medium heat till light brown. Do not over-brown as garlic becomes bitter. Add orzo and rice cooking until orzo an rice are lightly browned. Cook until light brown. Slowly add chicken broth; bring to boil. Reduce heat and simmer about 15 minutes or until rice and orzo are tender and broth is absorbed. Stir in green onions and parsley; season to taste with salt and pepper. Add toasted almonds at the end before serving.
