1/3 cup pine nuts, toasted 2 1/4 cups low sodium chicken broth 1/2 Cup sun-dried tomato half, cut in small cubes 2 cloves garlic, minced 1/2 teaspoon cumin, ground 1 2/3 cups couscous (10 ounces) 2 tablespoons parsley, minced 1 cup mushrooms, chopped Salt to taste |

In a 2 to 3 quart pan over medium high heat, stir pine nuts until golden brown, about 2 minutes; remove from pan. In same pan, bring the broth, tomatoes, garlic and cumin to a boil over high heat. Stir in the couscous and the mushrooms, cover and remove from heat. Let stand 5 minutes. Add the pine nuts and parsley and fluff with a fork. If desired, season to taste with salt. | ||
