Santa Fe Salad
(Wagon Wheels w/Roasted Chilies and Corn)

Dressing
4 tablespoons nonfat sour cream
3 tablespoons lime juice, fresh squeezed
2 tablespoons fat-free chicken broth
2 tablespoons ketchup
1 tablespoon extra-virgin olive oil, optional
1 tablespoon chili powder
1 clove garlic, minced
salt and pepper, to taste

2 cups pasta, wagon wheels
4 poblano peppers
3 ears corn on the cob, grilled
1 tablespoon olive oil
1/2 cup red bell pepper, diced
1/2 cup red onion, diced
1/2 cup cilantro, finely chopped
1 jalapeno pepper, seeded and chopped
 
For dressing, combine the first eight (8) ingredients for the dressing, whisk until smooth. Cook the wagon wheel pasta in 4 quarts of boiling water until al dente, 8 to 10 minutes. Drain the pasta in a colander, refresh under cold water, and drain well. Stir the pasta into the dressing. Preheat a barbeque or broiler to high. Roast the chilies over a high flame until charred on all sides, about 8 minutes. Wrap the chilies in wet paper towels and let cool. Brush the corn with the reserved olive oil and season with salt and pepper, broil or grill until nicely browned. Transfer corn to cutting board and cut the kernels off the cobs. Scrape the burnt skin off the chilies, cut the chilies in half, and remove the seeds and stems. Cut the chilies into 1/4 inch strips and add them to the pasta with the corn. Stir in the red bell pepper, onion, cilantro, and jalapenos. Correct the seasoning, add salt, chili powder and/or lime juice to taste. Garnish with cilantro before serving.
