1 1/2 pounds red potatoes, small, quartered 1 green bell pepper, seeded and chopped 3 eggs, hard boiled and sliced crosswise 1/2 red onion, chopped 1/2 cup black olives, sliced 1/4 cup Parsley, minced DRESSING 11/4 cups nonfat yogurt 3 tablespoons dill, fresh 1 tablespoon olive oil 2 1/2 teaspoons dijon mustard 1/2 teaspoon sugar 1 teaspoon salt 1/2 teaspoon black peppercorns, freshly ground 1 tablespoon balsamic vinegar 1 tablespoon nonfat mayonnaise |

Steam unpeeled potatoes until they are just tender when pierced with a fork, but not mushy. If they are very small, leave them in half or quarters with a very sharp knife, taking care not to pull off the skin. Place them in a large bowl Mix in the green pepper, chopped onions and sliced olives. Sprinkle the salad with the parsley and toss gently. In a small bowl, combine the dressing ingredients and pour the dressing over the salad. Toss it gently. Arrange egg slices over the top. | ||
