1 large jicama, diced 2 stalks celery , sliced 2 medium oranges, peeled and diced 3 medium green apples, diced 1 jar marshmallow cream 1/4 cup lowfat yogurt 1 tablespoon lemon juice CARMELIZED WALNUTS 1 tablespoon margarine 3/4 cup walnuts 2/3 cup brown sugar 1 tablespoon vanilla |

FOR SALAD: Mix together in a large salad bowl, the jicama, celery, orange and apples. Top with Marshmallow cream, yogurt and lemon juice. Mix again. FOR CARAMELIZED WALNUTS: Saute walnuts in margarine, add sugar and cook until mixture is golden brown (3-5 minutes). Add vanilla and take off heat. Let mixture cool. Break |
