Black Bean, Corn and Tomato Vinaigrette Printer Friendly version
 
12 ounces black beans, canned, drained and rinsed
11/2 cups corn, canned and drained
1 cup tomatoes, chopped
2/3 cup leeks, chopped
1/3 cup cilantro, chopped
DRESSING:
1/4 teaspoon tabasco sauce
1/2 teaspoon cumin
1/8 cup olive oil
1/2 lemon juice, fresh squeezed
1 teaspoon salt
1/2 teaspoon black pepper
 
Drain canned black beans and corn, and rinse. In mixing bowl add beans and drained corn (or use left over corn on the cob that has been cut off the cob), chopped tomato, sliced leeks and fresh cilantro. Make dressing in a small bowl combine olive oil, lemon juice, cumin, tabasco sauce and salt and pepper. Mix well and pour this mixture over vegetables. Taste and adjust flavors as needed.
