6 ounces spaghetti 1 1/2 teaspoons sesame oil, separated 8 ounces asparagus, fresh 8 ounces snow peas, fresh 1 large red bell pepper, julienned 6 each scallion, mince whites and slice green diagonally DRESSING: 1 clove garlic, minced 3 tablespoons sesame seeds, toasted 1/4 cup rice wine vinegar 1 tablespoon honey 1/2 tablespoon sesame oil 1 teaspoon Chinese five spice salt and pepper, to taste |

Cook the noodles in 4 quarts of boiling water until al dente, 6 to 8 minutes. Drain in a colander, rinse with cold water and drain well. Transfer noodles to a large mixing bowl and toss with 1 teaspoon sesame oil. Snap the fibrous ends off the asparagus and cut the stalks sharply on the diagonal into 2" pieces. Cook the asparagus in 2 quarts boiling, salted water until crispy-tender; or microwave for two minutes. WIth a slotted spoon, transfer the asparagus to a colander and shock-chill with ice water (see Note). Drain well. Cook, drain and chill the snow peas the same way. Only cook about 1 minute. Prepare the dressing. Mash the garlic and half the sesame seeds and put into an attractive serving bowl. Add the vinegar, honey, remaining 1/2 teaspoon sesame oil and seasonings, and whisk until the salt crystals are dissolved. Correct the seasoning at this time; dressing should be highly seasoned. Add the noodles, asparagus, snow peas, bell pepper, scallion whites and half of the scallion greens to the dressing and toss to mix. Sprinkle the remaining sesame seeds and scallion greens on top and serve at once. | ||
