10 ounces frozen spinach, thawed 1/2 cup fat-free chicken broth 1 tablespoon all-purpose flour 2 cloves garlic, peeled and crushed 1/4 teaspoon lemon pepper 1/4 cup chopped tomato 2 tablespoons green onion, thinly sliced 1 tablespoon nonfat yogurt 1 tablespoon olive oil salt, to taste 1/4 cup pine nuts, toasted (no oil) 1 large pizza crust part skim milk mozzarella cheese 1 large red bell pepper, chopped 1 tablespoon lemon juice |

Thaw spinach (you can thaw in covered microwave safe dish in the microwave for several minutes, breaking up center with fork). Drain spinach, pressing out excess moisture. Place in food processor; add chicken broth, flour, garlic, lemon pepper seasoning and oregano. Puree this mixture. Add tomatoes, onion, yogurt, pine nuts and olive oil. While you are preparing the pesto sauce, brush pizza with olive oil and bake in 400 degree oven for 10 minutes. Remove from oven, spread with sauce and top with bell pepper and cheese. Bake an additional 10 minutes. | ||
