Spaghetti with Sausage Printer Friendly version
 
8 ounces spaghetti
1 cup low-fat spaghetti sauce
1/2 cup water
2 tablespoons tomato paste
1 smoked sausage, low fat
2 cups mixed vegetables, frozen
1 cup mushrooms, sliced
1 tomato, chopped
1/2 teaspoon red pepper flakes
1/2 teaspoon Italian seasoning
 
Bring a large pot of water to a boil and add the spaghetti. Cook until spaghetti is done, about 9 minutes. Taste the noodles to tell when they are done. You want a slight bite left in the middle to avoid mushiness. Drain the noodles and set aside. Rinse the same pot you cooked the noodles and add the rest of the ingredients. Bring to a boil, reduce to a simmer and cook for 3-5 minutes until the vegetables are tender and sausage is heated through (if using raw turkey or sausage, make sure it is cooked thoroughly beforehand). Add the spaghetti to the pot of sauce, toss and serve.
