Skewered Beef with Sweet Hot Bourbon Glaze Printer Friendly version
 
1/4 cup dark brown sugar, firmly packed
1/4 teaspoon crushed red pepper
1/3 cup bourbon
3 tablespoons low sodium soy sauce
1 tablespoon olive oil
4 teaspoons dijon mustard
1 pound top sirloin steak, cubed 1”
1 medium green bell pepper, cut 1” thick
1 medium red bell pepper,cut 1"
1 medium red onion, cut 1” thick
8 small red potatoes, quartered
1/2 pound mushrooms
2 cups rice, cooked
 
In small bowl, combine brown sugar, red pepper flakes, bourbon, soy sauce, oil and mustard; beat with wire whisk until sugar has dissolved, Place beef in shallow glass baking dish. Pour bourbon mixture over beef. Let stand at room temperature for 15 minutes. Prepare all other vegetables for skewers. Heat grill. When ready to grill, remove beef from marinade and reserve marinade. Alternately thread beef and vegetables on skewers, Place kabobs on grill and cook 7 to 9 minutes or until meat is at desired doneness, turning once. Meanwhile, place reserved marinade in small saucepan, Bring to boil. Boil until sauce measures 1/2 cup, stirring occasionally. Remove from heat; let stand 2 minutes to thicken, and then spoon glaze over kabobs. Serve on a bed of rice.
