MARANADE/SAUCE
2/3 cup raspberry jam, seedless
2 teaspoons horseradish
2 tablespoons balsamic vinegar
4 boneless skinless chicken breast
1 1/2 teaspoons thyme
1 teaspoon olive oil
1/2 teaspoon salt
1/2 cup red onion, chopped
3 cloves garlic, chopped
2 tablespoons balsamic vinegar
1/4 teaspoon pepper
1/4 teaspoon salt
1 teaspoon cornstarch
1/4 cup water

Mix raspberry jam, horseradish and balsamic vinegar together and divide in half. Place chicken breasts in one half of the mixture and marinate for 30 minutes. Spray large nonstick skillet with cooking spray, add olive oil, onion and garlic, sauté 3-5 minutes. Combine thyme and salt, sprinkle over chicken. Add chicken to skillet; sauté 6 minutes on each side or until done. Remove chicken from skillet; keep war!1l. Reduce heat to medium-Iow. Deglaze pan with 1/4 cup water. Add jam mixture salt and pepper, stirring constantly until jam melts. Thicken with cornstarch and water if too thin. Spoon raspberry sauce over chicken.
