Ricky's Mexican Lasagna  
 
1 package tortillas, softened
1 pound ground turkey, browned and drained
1 can enchilada sauce, mild
2 cups spaghetti sauce, or tomato sauce
1 can black beans
1 can corn
1 can olives
1 cup brown and wild rice, cooked
1/4 cup pepperoncini pepper
3 cups lowfat cheddar cheese
 
Brown ground turkey and drain grease. Dip tortillas in tomato mixture. Layer tortillas with remaining ingredients. Bake at 350 degrees for 25-30 minutes or until cheese melts.
