1 1/2 pounds pork tenderloin, lean 1/2 cup lime juice 1/4 cup Worcestershire sauce 1/2 cup Dijon mustard 3 tablespoons rice wine vinegar 2 tablespoons water 1 1/2 teaspoons cumin 1/4 teaspoon salt and pepper SALSA INGREDIENTS: 1 1/2 cups peaches, peeled and chopped 3/4 cup cucumber I seeded and chopped 3/4 cup red bell pepper, seeded and chopped 1/4 cup green onion, sliced 1 jalapeno pepper, seeded and chopped 2 tablespoons honey 2 tablespoons lime juice 1 tablespoon cilantro 2 cups brown and wild rice, cooked |

Place the pork loin or chops in a large heavy plastic bag. Set the bag in a large bowl. Combine the next 7 ingredients and pour over chops. Seal bag and chill for 4 to 24 hours, turning occasionally. Remove the pork from the bag, reserving marinade. Grill pork on an uncovered grill directly over coals for 20 to 30 minutes, brushing with marinade. (If using broiler: broil chops 4 to 4 inches from heat for 15-20 minutes.) For the salsa, in a medium bowl combine all ingredients. Cover and chill for 30 minutes. | ||
