1 pound extra lean ground beef 3/4 cup cracker meal 1/2 cup onion, chopped 1/3 cup tomato sauce 1/2 teaspoon worcestershire sauce 1/2 teaspoon oregano 1/2 teaspoon garlic, minced 1/2 teaspoon salt and pepper 2 cups part skim milk mozzarella cheese, grated 1/4 cup Egg Beaters@ 99% egg substitute 1/2 cup green pepper, chopped fine TOPPING FOR MEATLOAF 1/2 teaspoon garlic 1/2 teaspoon salt and pepper 1/2 teaspoon Italian seasoning 2/3 cup tomato sauce 1/4 teaspoon oregano 3 cups zucchini, sliced and sautéed 2 cups carrots, sliced and sautéed 1 1/2 tablespoons oil, for sautéing |

Preheat oven to 350 degrees. Combine meat, egg, cracker crumbs, onion and green pepper, 1/3 cup of tomato sauce, salt, pepper and all other seasonings. Mix well, shape into a 1 0"X12" rectangle on wax paper. Sprinkle with the cheese, roll up and press ends to seal. Place in a shallow baking dish and bake 45 minutes to 1 hour. Pour topping mixture over the top and bake another 10 to 15 minutes. Serve with sautéed vegetables and wild rice. | ||
