1/2 teaspoon olive oil 1/4 onion, chopped 1/2 cup mushrooms, thinly sliced 1/2 box frozen chopped spinach, thawed and drained 2 ounces chavrie, low fat 2 tablespoons egg substitute, beaten 1 teaspoon fresh thyme 1 teaspoon oregano, dry salt and pepper, to taste 4 chicken breasts, boned but with skin |

Preheat oven to 350 degrees. Spray an 8" square pan with vegetable spray. Sauté onions in olive oil until soft; add mushrooms for a minute or two. Set aside. Combine spinach, chevre, egg substitute, and herbs, and mix. Stir in the sautéed onions and mushrooms. Season to taste. Place each breast half on a board and trim away excess fat Gently loosen the skin from one side of the breast and stuff approximately 1/3 cup of filling under the skin. Tuck the skin and meat underneath, forming an even, round shape. Put the stuffed breasts in the prepared baking dish, brush with a bit of oil, and roast until golden brown, 35-40 minutes. Baste occasionally while baking. Do not overcook or the meat will dry out Remove from oven and serve hot or warm. |
