1 graham cracker crumb pie crust
FILLING:
vegetable cooking spray
1 -- 15 ounce can pumpkin
1 cup milk, skim
1/2 cup packed brown sugar
1 tablespoon all-purpose flour
3 tablespoons maple syrup
2 tablespoons bourbon
1 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 teaspoons vanilla
1/4 teaspoon nutmeg
1/4 teaspoon allspice
2 large egg whites, lightly beaten
1 large egg, lightly beaten
TOPPING:
1/3 cup pecans, chopped
1/4 cup packed brown sugar
1 1/2 teaspoons maple syrup

Preheat oven to 400 degrees. Combine pumpkin & remaining ingredients; stir well with a whisk. Pour into crust. Bake for 40 minutes; shield edges of crust with foil after 30 minutes if crust is too brown. Combine nuts, 1/4 cup brown sugar, and 1 1/2 teaspoons syrup. Sprinkle over pie. Bake an additional 15 minutes or until filling is set. Cool completely on a wire rack.
