No-Bake Chilled Lemon Souffle Printer Friendly version
 
3 envelopes unflavored gelatin
3/4 cup lemon juice
1/4 cup sugar
1 tablespoon lemon zest
12 ounces fat free whipped topping, thawed
1/4 cup pistachio nut, chopped
 
Tie a double strip of wax paper around a 2 quart soufflé dish to make a 2 inch collar. In medium saucepan, sprinkle unflavored gelatin over 1 cup water. Let stand 5 minutes. Place saucepan over low heat, stirring constantly, and cook 5 minutes or until gelatin is completely dissolved. Add lemon juice and sugar to gelatin mixture. Chill about 3 minutes or until gelatin mixture starts to thicken with dropped from a spoon. Spoon mixture into mixing bowl and using an electric mixer on high speed, beat gelatin mixture for 2 minutes. Fold in lemon zest and thawed whipped topping. Spoon mixture into prepared soufflé dish. Chill 2 hours. Remove the wax paper cuff and gently press chopped pistachios onto sides of soufflé. Other liquids can be used in place of the lemon juice and fresh or frozen fruit that has been pureed may be added in place of or in addition to the lemon zest.
