LEMON FILLING
1 large egg, lightly beaten
3/4 cup sugar
5 teaspoons cornstarch
1/2 teaspoon lemon rind, grated
1/3 cup water
1/3 cup lemon juice, fresh squeezed
MACAROON TART SHELL
2 cups coconut flakes
1/2 cup sugar
6 tablespoons flour
1 teaspoon vanilla
2 large eggs

Preheat oven to 400 degrees. SHELL: Combine all ingredients for shells in a bowl; d1vide mixture evenly among 12 muffin cups coated with cooking spray, pressing mixture into bottom and up sides of pan, bake 5-7 minutes until lightly browned. Remove and cool completely. FILLING: Place egg in a small bowl, set aside. Combine sugar, cornstarch and lemon rind in a saucepan. Gradually add water and lemon juice and stir with a whisk until blended. Bring to a boil over medium heat and cook 1 minute stirring constantly. Gradually stir 1/4 of hot lemon mixture into egg and add to remaining lemon mixture, stirring constantly. Cook over medium heat 1 minute or until thick, stirring constantly. Pour mixture into a bowl. Place plastic wrap over bowl and chill. Spoon into tart shells, top with optional low-fat whipped topping and toasted coconut.
