Dark Fudge Brownies (Black Bean) Printer Friendly version
 
2 cups black beans, drained
3 ounces unsweetened chocolate
1 Tablespoon light butter
5 egg whites
1 whole egg
2 1/2 Cups sugar
3 Tablespoons Flour
1/2 cup chocolate chips
 
Preheat oven to 350 degrees. Spray 9 x 13 pan with vegetable spray. Place beans in colander, rinse thoroughly, drain. Melt chocolate and butter in microwave (60-90 sec), Stirring every 30 sec. Blend in processor or blender, beans & 2 egg whites until smooth. In large bowl combine bean puree, sugar, flour, & 3 egg whites + whole egg. Mix with electric beater until well combined. Mix in melted chocolate and chocolate chips. Pour mixture into pan. Sprinkle with 1/2 cup chopped walnuts (optional). Bake 30 min. or until it pulls away from the sides of the pan. Cool completely in the pan before cutting.
