1/2 cup sugar 3 tablespoons cornstarch 1/3 cup water 1/3 cup egg substitute 12 ounces evaporated skim milk 1/2 cup nonfat sour cream 1 tablespoon vanilla 24 reduced fat Nilla wafer 4 medium bananas 3 egg whites 1/4 teaspoon cream of tartar 1 tablespoon sugar |

Combine 1/2 cup sugar and cornstarch in a medium size heavy saucepan; gradually stir in water, egg substitute, and milk. Bring to a boil over medium heat, stirring constantly, for 1 minute. Remove from heat; fold in sour cream and vanilla. Place a layer of vanilla wafers in bottom of a 1 1/2 quart casserole dish, spoon 1/3 of pudding over wafers. Top pudding with half of banana slices. Repeat layers. Spread remaining pudding over top. Arrange remaining vanilla wafers in pudding around side of dish. Set aside. Beat egg whites and cream of tartar at high speed until foamy. Add 1 tablespoon of sugar and beat until stiff peaks form, about 2 minutes. Spread meringue over pudding, sealing edge of wafers. Bake at 325 for 25 minutes. Let stand 10 minutes before serving | ||
