1 cup unbleached flour 1/2 cup whole-wheat flour 2/3 cup sugar 1 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon ground cinnamon 1/2 cup apple juice, no sugar added 1/4 cup nonfat sour cream 1 egg, lightly beaten 2 1/2 cups peeled apples, sliced thin 1/4 cup raisins 1/4 cup light brown sugar, for topping 1/4 cup chopped nuts, finely chopped 3/4 cup powdered sugar, for glazing 2 tablespoons skim milk 1/2 teaspoon vanilla |

Combine the flours, sugar, baking soda, salt and cinnamon in a medium bowl. Stir to mix well. Stir in the apple juice, sour cream, and egg. Fold in the raisins and apples. Coat a 9" round pan with non-stick spray and spread the batter evenly in the pan. Sprinkle the combination of brown sugar and nuts over the top. Bake at 350 degrees for 30 minutes or just until a wooden toothpick inserted in the center comes out clean. While the cake cools, mix together the last 3 ingredients. Remove cake from pan and place on serving plate. Drizzle the glaze mixture over the top and serve. | ||
