1/2 teaspoon light margarine, softened 3 tablespoons onion, finely chopped 1 clove garlic, minced fine 2 tablespoons green pepper, finely chopped 4 eggs 4 tablespoons salsa 1 cup egg substitute 6 flour tortillas, softened 1/4 cup cilantro, chopped |

Melt margarine in large frying pan. Saute onions, garlic, and pepper until soft. Beat eggs and egg substitute until light and pour into frying pan. Cook over very low heat, stirring constantly. When eggs begin to harden, add salsa and cilantro and continue to cook and stir until eggs are set. Serve in tortillas immediately. | ||
