1 1/4 cups all-purpose flour 2 tablespoons sugar 3 large eggs, lightly beaten 2 tablespoons butter, melted 11/2 cups skim milk 1/2 teaspoon lemon extract 1 cup strawberries 4 tablespoons sugar 1 Cup vanilla low-fat yogurt powdered sugar |

| Combine all ingredients into blender and blend until white of flour is incorporated. Let sit in refrigerator for about one hour. Heat crepe or omelet pan, add small amount butter, pour about two tablespoons crepe batter into pan. Swirl pan, let crepe set, turn once and remove. Place crepes between waxed paper. Can be frozen. Mix filling ingredients. Fold crepes in half. Top with strawberry mixture. | ||
